Watermelon Mojito

  • four bunches of mint, chopped
  • 2 tablespoons sugar
  • 1/2 cup freshly squeezed lime juice
  • 3/4 cup light rum
  • 6 ounces seedless watermelon, pureed

Watermelon can be divisive–it’s one of those oddly textured, sometimes sweet sometimes not fruits that some people just can’t get behind. Either you love it or hate it. Mojitos, on the other hand, are great. They’re hands down a crowd pleaser–fresh, minty, citrusy, and smooth.  If you, like many, are on the fence about watermelon, then let us attempt to sway you with the refreshing lovechild of fresh watermelon, mint, and lime: the watermelon mojito.

In the bottom of a large shaker, muddle the mint, sugar and ¼ cup of the lime juice. Fill the shaker with ice. Add the rum, watermelon puree and the remaining ¼ cup of lime juice; shake well. Strain into a glass and serve over ice. Garnish with leftover lime and mint.
